What a pretty Wednesday!

It was so nice this afternoon that Stephen and I decided to play with Stella outside. We put a quilt down with some toys for her. She was especially interested in the different patterns of the quilt.

Big girl!

Sunday evening, Stella got to try out her high chair for the first time. I think she liked it!



But, apples are still just ok.



This was so funny today. I hate that I couldn't get a better picture. You can't tell here, but Layla has her squeaky cupcake toy in her mouth. She was squeaking away and Stella was cracking up. Earlier, I had put Stella down on her mat and was saying to her, "would you like to play with your toys?" Layla obviously wanted to play. She ran off to get her cupcake and entertained us for awhile.

Birthday at the park

Our friend, Carter, had his 6th birthday today at the park. I cannot believe he is already a kindergarten graduate! This was Stella's first party to attend. It was outside, so she loved it. If she is ever fussy, that's your best bet. Take her outside.

Recipe time!

But first a picture of Stella, of course!




This recipe is a little different from the normal things that I would post. It's very light. Two weeks ago, I decided it was high time that I worked on taking off my pregnancy weight plus some. I am proud to announce that my weight loss is already in the double digits. Woohoo! Unfortunately, I do have a long way to go. To help me along, I have been trying to revamp some of my favorite foods. Many "health" foods I already love, it's just way easier to grab some fast food or cook something quick and easy. That's why I packed the pounds back on. . . Here is a recipe for Eggplant Parmesan. This is a lighter version since most recipes call for battering and deep frying the eggplant.

Light & Easy Eggplant Parmesan

1 large eggplant, sliced into 1/4-1/2 inch slices
olive oil
dried oregano to taste
salt and pepper to taste
1 lb. fresh tomatoes chopped, or one can
fresh garlic minced, or garlic powder
1/2 cup cheese (I use the Itailian blend. You can also use mozzarella & Parmesan.)

Brush the eggplant slices with olive oil. Place on a baking sheet under a hot broiler. Broil on one side until browned and tender. If one side starts to brown too quickly, flip slices.

When eggplant is done, preheat oven to 400 degrees. Lightly brush a 9x13 baking dish with olive oil. Spread half of the tomatoes on the bottom of the pan. Add a layer of the eggplant. Sprinkle eggplant with salt, pepper, oregano, and garlic. Layer remaining tomatoes. Top with cheese. Bake until hot and bubbly and the cheese is melted.

I served it with whole wheat spaghetti. Yummy!

Happy Father's Day!

On Saturday we went to Missouri to visit with my Mamaw's family and see Papaw for Father's Day and his birthday. Stella thought Papaw was a hoot.

Today we went to Reelfoot Lake to eat with Granny, Granddaddy, Nene, E, and Aunt Sis. Daddy had to work so he wasn't able to go to MO or the lake. :(



But, Stella got to see him later and was obviously happy about it!

Look at me!

Tonight, Aunt Sis came over to get her hair done and brought us dinner. Stella was wearing her "Frank Burns Eats Worms" shirt that she got for her.



Stella started out playing on her favorite mat like this while Mommy highlighted Aunt Sis's hair.



We looked over to find her like this! I guess she wanted to watch tv instead. She turned a complete 180. Little sweetie is slightly mobile already. YIKES!
