Little Hunter

Now for something extra. I bought a special edition of Taste of Home magazine for Casseroles. (pick one up at your earliest convenience!) I love Taste of Home and have been reading Mom's for lots of years. They have great recipes from real families. Normally you won't have to locate a weird or obscure ingredient that no local store stocks. I am a casserole lover so I was anxious to try one of these. Mom also tried out a Paula Deen shepard's pie tonight. Both of them turned out GREAT so I will pass mine along.

Corn Bread Taco Bake

1 1/2 lbs. ground beef
1 can whole kernel corn, drained
1 can (15 oz.) tomato sauce
1/4 cup water
1 envelope taco seasoning
1/2 cup chopped green pepper
1 package ( 8 1/2 oz. ) Jiffy cornbread mix
1 can (2.8 oz. ) french-fried onions
1/3 cup shredded cheddar cheese

Brown ground beef. Drain. Stir in corn, tomato sauce, water, green pepper, and taco seasoning. Spoon into a greased 2 qt. baking dish. Prepare cornbread mix according to box directions. Stir in half of the french-friend onions and spoon over beef mixture. Bake, uncovered at 400 degrees for 20 minutes. Sprinkle with cheese and remaining french-fried onions and continue baking 3-5 minutes or until cheese is melted and a toothpick inserted into the cornbread mixture comes out clean.

Dad bought Stella this outfit for one of her showers. Everyone knows how I feel about camo outside of a hunting/military situation but even I will admit that she looked cute!
